1 (5 lb.) hen-water to cover hen, 1( #2 1/2) can tomatoes, (1 #2 1/2) can tomatoes & green chilies, 1 bunch celery- chopped, 1 bay leaf, 1 hot pepper, 1 large can mushrooms-chopped, 4 onions-chopped, 1 tsp. chili powder 2 cans tomato paste, 3 tbsp. flour, 3 tbsp. shortening, 4 cloves garlic, 2 to 3 pkg. spaghetti

Cover hen with water-add tomatoes, green chilies, salt, 1 piece celery, 1 clove garlic, 1 onion & 1 hot pepper. Simmer for approximately 30 min. per pound or until tender. Remove hen from bones & set aside-cook remaining celery, onion, & garlic in small amount of shortening until shiny, not brown. Prepare roux from flour & shortening-combine roux & onion mixture with chicken broth, add chili powder, bay leaf, & tomato paste and season to taste. Simmer 3 to 4 hrs. Add chicken and mushrooms. Cook spagetti according to instructions & mix in well with sauce. Serve with crackers.
