1 lb. ziti noodles
1 lb. ground beef or chicken
1 Taco seasoning packet
1 15 oz. can black beans
1/2 lb. cheddar cheese
1/2 lb. Velveeta cheese
1 cup milk
1 large tomato - diced
2 cups lettuce - shredded

Prepare noodles, leaving them a bit undercooked. Drain. Prepare the ground beef or cubed chicken in a pan, drain. Add the taco seasoning packet to the meat as directed on the packet, then set aside. Boil the black beans in a covered pan on medium heat for 5-7 minutes. (This softens the beans. Grate the cheddar and thin slice the Velveeta.

Layer the following ingredients three times in a deep casserole dish: noodles, meat, beans, cheeses and a splash of milk on each layer. Bake covered at 350º for 1/2 hour. Sprinkle the lettuce and tomato on top just before serving.

I usually have to make a double batch of this so that we can have leftovers. You can serve it with salsa, hot sauce and sour cream as well. Try adding garlic, cumin and a bay leaf to the black beans while they boil to spice them up. (Just remember to remove the bay leaf before adding beans to the ziti!)
