1 lb. red bell peppers
2 large cloves garlic
8 oz. Neufchatel cheese
2 tsp. balsamic vinegar
1/4 tsp. salt
1/8 tsp. crushed red pepper

Directions:
Directions:
Cut bell peppers in half. Place skin side up on a baking sheet. Add garlic cloves. Broil 4 minutes. Turn garlic and broil 4 more minutes. Remove garlic and broil peppers for 2 more minutes. Place peppers in a brown bag for 15 minutes. Peel peppers and garlic.

Place peppers and garlic in a food processor and process until smooth. Add cheese and process until smooth. Stir in vinegar, salt and crushed red pepper. Cover and chill. Serve with Tortilla chips.
