2 lbs of ham
Ham bone
8-10 cups of water
2 - 14 oz. bags of frozen peas
1 medium size onion
½ tsp of pepper
1 ½ c of chopped or grated carrots
1 ½ c of chopped celery
1 clove garlic
4 bay leaves
1 tsp butter or oil

Directions:
...Cut ham into large pieces
...Place ham & bone into a pot with water
...Boil the ham for 1.5 hrs.
...Let ham and water cool
…Skim congealed fat from top of pan and discard
…Remove ham and set aside
…Chop the onion into small pieces and cook in a frying pan with the butter until golden.
…Place peas, carrots, onion, celery, garlic clove and bay leaves into the pot and cook with a low boil for 45 minutes
…Let cool for about 30 minutes
…Discard Bay leaves
…Puree everything except the ham
.... Cut all ham off of the bone and the rest of the ham into ¼” pieces
….Discard ham bone
….Add the ham to the pot with the rest of the ingredients and re-heat until hot.

French Canadians made this hearty soup into a wonderful warming treat that stuck with you. This recipe also will accomplish the same result but some healthy changes were made for us more sedentary people.
