4 cups fresh spinach leaves
1/2 tablespoon olive oil
1 tablespoon chopped shallot
1/8 teaspoon salt
4 turns of the pepper grinder

Directions:
Directions:
Saute shallot in olive oil over medium heat. Add remaining ingredients. Saute 2-3 minutes, just until spinach is wilted.
