2-3 Cups of cooked chicken breasts, diced
1 box Uncle Ben's Long Grain and Wild Rice
1/2 C. chopped celery
1 small package of sliced almonds
8 oz. can crushed pineapple, drained thoroughly
1/2 C. finely chopped onion, green or white
Option: 2 small sweet apples, chopped with peel
2 t. vegetable oil
2 T. balsamic vinegar
2 T. lemon juice
1 t. salt
3/4 C. mayonnaise

Directions:
Directions:
Cook Uncle Ben's rice according to package. Cool.
Cook chicken breasts, chop and cool. Add all ingredients. If using apple, pour the lemon juice over the apples to coat before adding to mixture. All ingredients may be added at once and thoroughly mix. Refrigerate.
