2 cups cooked or canned tomatoes
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon ground pepper
3 tablespoons butter
2 tablespoons flour
1 teaspoon sugar
6 or 12 eggs
3/4 cup grated cheese - cheddar or swiss

Directions:
Directions:
Butter 6 ramekins/small baking dishes. Combine the tomatoes, onions, salt and pepper, and simmer 15 to 20 minutes. Add the butter and flour, which have been kneaded together, and stir until the mixture is thickened. Add the sugar and taste the mixture for seasoning. Spoon the sauce into the ramekins. Break an egg or two, into each dish. Sprinkle lightly with cheese and bake at 350 degrees 15 minutes or until the white is set.
