3/4 Cup Chopped Onion
1 Clove Garlic, Minced
2 Tablespoons Salad Oil
2 1-pound cans (4 cups) tomatoes
2 6-oz cans (1 1/3 cups tomato paste
1 cup water (add a little more if needed)
1 TLA. sugar
1 tsp 1/2 salt
1/2 tsp. pepper
1 1/2 tsp. crushed oregano
1 bay leaf
1/4 chopped parsley
1/4 tsp thyme

Directions:
Directions:
Cook onion and garlic in hot oil till tender but not brown. Stir in the next ingredients. Simmer uncovered for several hours until it is as thick as you want it. Stir occasionally. It I use sausage, I brown it along with the garlic and the onions and then let it summer in the sauce.
Double the recipe for a larger family
