8 potatoes
8 eggs
1 cup cheese ( your preference )
olive oil
4 soft tortilla shells

Directions:
Directions:
Peel and boil potatoes. Let cool overnight in frig. Scramble eggs, using olive oil or butter if preferred. Shred potatoes and add to scrambled eggs. Mix together until all is warm. Put mixture in tortilla shells and cover with home made Salsa.
