4 thick pork shops (about 1 1/2 inches)
Filling
2 apples, unpeeled, cored, chopped
1/2 c raisins
3/4 c fresh breadcrumbs (from French Bread)
1 T brown sugar
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp ground cloves
2 T melted butter
2 T chopped chives or parsley
2 T butter or margarine
1 c beef broth

Directions:
Directions:
1. Trim excess fat from chops, make a slit to form a pocket in fat end of each chop.
2. In a bowl, combine apples, raisins, breadcrumbs, brown sugar, salt, pepper and cloves.
3. Add melted butter and chives. Mix well. Let stand for a few minutes for flavors to blend.
4. Stuff each chop with a generous portion of stuffing. Skewer shut with toothpicks.
5. Heat butter in heavy skillet. Brown chops slowly over low to medium heat, about 5 minutes on each side.
6. Add beef broth. Bring to a simmer
7. Simmer port chops over low to medium heat about 30 minutes or until tender.
8. Remove toothpicks. Transfer to serving platter. Pour pan juices over chos and serve immediately.
