l ounce margarine (6-7 tsp), 8 ounces of plain flour or 1.2 cups (if using self rise flour, mix with fresh milk and omit bicarbonate of soda), pinch of salt, 1 level teaspoon of bicarbonate of soda, 1/4 pint or 1/2 cup of sour milk (or 1 teaspoon cream of tartar with fresh milk).

To glaze: 4 T. milk

Rub the margarine into the flour (helps keep bread moist). Add the salt, dissolve the bicarbonate of soda in the sour milk, add to the flour.
Knead lightly and form into a round loaf.
Brush with a little milk. Bake for 15 minutes in a very hot oven (475º) then lower to moderately hot (350º) for a further 10-15 minutes until bread is firm to the touch.

To vary: add 4 ounces of raisins to flour, add 1/2-1 tsp. caraway seeds.

Form into a round. Brush top of bread with melted butter and sprinkle with castor sugar and mark into 4 portions before cooking.

This recipe is from Veronica McKinlay from Ballymoney, County Antrim, Northern Ireland. She is a cousin of Grandma G. It is written in her words as she shared this recipe during a visit to her home. Several loaves of this bread became school projects as the kids organized presentations on their "heritage".
