2 plum tomatoes, sliced
1/4 tsp salt
1/4 tsp pepper
1 large avacado, cut into 8 slices
1 T rice vinegar
1/4 c butter, softened
2 T shredded Parmesan cheese
8 whole grain bread slices
4 Muenster cheese slices
8 bacon slices, cooked
4 sharp Cheddar cheese slices
4 Montery Jack cheese slices

Directions:
Directions:
Sprinkle tomato slices evenly with salt and pepper; sprinkle avocado slices with rice vinegar. Set aside.
Stir together butter and Parmesan cheese. Spread on 1 side of each bread slice.
Place 4 bread slices, buttered side down on wax paper. Top evenly with Muenster cheese, bacon, avocado, Cheddar cheese, tomato, and Montery Jack cheese; top with remaining bread slices, buttered side up.
Cook sandwiches in a large non-stick skillet or griddle over medium heat 2 to 3 minutes on each side or until golden brown and cheeses are melted.
*1/2 c guacamole may be substituted for avocado and rice vinegar.
