4 boneless skinless chicken breast halves
1/2 cup lime juice
1 teaspoon cumin
1 teaspoon garlic powder
1 tablespoon olive oil
1/4 cup salsa verde (green salsa in jar)
1/4 cup low sodium chicken broth
4 cups fresh spinach
Salt and pepper to taste
Chopped cilantro
4 teaspoons sour cream

IN large zip-lock bag, combine lime juice, cumin, garlic powder. Add chicken, mush it around enough to coat. Marinate 10 minutes while you get the rest of dinner going. In a skillet over medium-high heat, heat olive oil. Pull chicken from marinade, reserving marinade. Cook chicken on both sides until well-browned and cooked, about 6 to 8 minutes per side depending upon thickness of chicken. Salt and pepper to taste. Remove from skillet and keep warm. Add marinade and chicken broth to skillet and bring to strong simmer. Let the sauce reduce to about half, then add salsa verde. Cook a little longer till salsa is incorporated and heated through. Serve chicken over a bed of raw spinach (the heat of the chicken will wilt the spinach), then top with sauce, a dollop of sour cream and a sprinkling of chopped cilantro.
