1 16 ounce box elbow macaroni
3 stalks celery (chopped very fine)
3 carrots, peeled and shredded
1 Vidalia onion (chopped finely)
˝ c or more of Duke’s Mayonnaise
Coarse salt and pepper
1 c mild cheddar cheese, shredded

Directions:
Directions:

Cook macaroni until tender approx. 10 minutes or according to package instructions. Drain well and transfer to large bowl to cool.
After macaroni is cooled, add the celery, carrots, onion and mayonnaise. Season with salt and pepper. Cover with plastic wrap and chill in the refrigerator until cold, at least 2 hours. Add cheese just before serving.
