1 c shredded mozzarella cheese
1/2 c grated parmesan cheese
1/3 c mayonnaise
3 T chopped red pepper
2 T finely chopped green onions
48 Triscuit crackers

Directions:
Directions:
Mix all ingredients except crackers. Apread each cracker with about 1 t cheese mixture. Microwave 12 topped crackers at a time on micorwaveable plate on High for 25 - 35 seconds or until cheese melts. Makes 48.

Great Substitutes: Substitute chopped roasted red peppers for red pepper. Use Triscuit Low Salt for Triscuit. Also - Use your oven: Bake at 350 for 3-4 minutes or until cheese melts.
