2 lbs yellow squash
1 medium onion
½ stick butter or magerine
½ c milk
salt and pepper to taste
2 eggs, (well beaten)

Directions:
Directions:
Dice onion and chop squash into small pieces. Boil or steam squash and onion together in as little water as possible, drain and mash, and then add the milk eggs and salt and pepper
Put in casserole and put buttered bread crumbs on top. Bake about 35 minutes in medium oven until set. This will set like a custard. (can use eggplant instead of squash)

This was a dish that my children would eat, even though they didn't care for squash when cooked alone. Very tasty and a big hit at pot luck dinners
