1 large onion-finely chopped
2 chicken bouillon cubes or 2T instant bouillon

1/2 tsp. oregano

1 bay leaf

In lg. deep pot, combine peas, water, ham shank, onion, chicken bouillion, and seasonings. Simmer, uncovered 1 1/2 hrs. Remove ham bone; trim meat off bone and return meat to pot. Stir in carrots. Simmer uncovered an additional 2-2 1/2 hrs.
Now I put my soup through a food mill so it is smooth, but you don't have to do that.
