2 28oz cans diced potatoes
1 large onion, chopped
1 lb Velveeta cheese, cubed
1 can cream of chicken soup
1 can cream of celery soup
1 can cream of potato soup
Directions:
Directions:
Boil potatoes and onion until done. Retain at least 3 cups of water and add 1cup of milk(makes cheese melt creamier) Add three soups, reduce heat to low. Add cheese cubes until all are melted.

Additional options: serve with bacon bits and chives
