Cookies:
1 c. butter
1/2 c. sugar
1 egg
3 c. flour
1/2 tsp. baking powder
3 tsp. vanilla

Filling:
1-1/2 c. dates, chopped
1/2 c. sugar
1/2 c. water
2 tbsp. lemon juice

Directions:
Directions:
Prepare filling by combining all ingredients in a saucepan. Cook until thick then allow to cool.

Prepare cookie dough and place in refrigerator to chill for a few hours. When chilled, roll out dough and cut using a round (scalloped) cookie cutter. Place a tsp. of filling in between 2 cutouts. Press down on the cookie edges to help seal. Bake on a cookie sheet at 400 for 7 - 10 minutes
