Butter Cups:
3 oz. cream cheese
1/2 c. butter
1 c. flour
1/2 tsp. sugar

Filling:
1 slightly beaten egg
3/4 c sugar
1 tbsp. butter
1 tsp. vanilla
10-12 finely chopped dates
1/2 c. chopped nuts

Butter Cups:
Blend like pie dough. Chill 1 hr. and form into equal size balls. Place each ball into a mini sized cupcake pan. Build up edges with fingers to form an indentation.

Filling: Blend in small bowl slightly beaten egg, sugar, butter, vanilla, dates. Sprinkle a little of the nuts in the bottom of each butter cup, drop in some filling and sprinkle on more nuts. Bake 350º for 25 min. Remove from pan when cooled.

**Could use mini muffin liners.
