1 1/4 c. flour
1/2 c. unsweetened cocoa powder
3/4 tsp. baking soda
1/4 tsp salt
1 c. sugar
1/2 c. unsalted butter
1 egg
1/2 tsp vanilla
1/4 tsp mint

Filling:
2 1/2 c. powdered sugar
1/2 c. butter
2 tbsp milk
1/2 tsp mint
red and green food coloring

Cookies:
Sift flour, cocoa, baking soda and salt. Set aside. In large bowl beat sugar and butter until smooth. Beat in egg then vanilla and mint extract. On low speed beat flour mixture into butter mixture. Divide in half; shape each into a log about 1 1/2 inches in diameter. Wrap in plastic wrap; refrigerate 4 hours.

Heat over to 375º. Cut logs into slices about 1/8 inch thick. Place on ungreased baking sheet. Bake 8-10 minutes or until almost firm. Cook on wire rack.

Filling:
Beat confectioners' sugar, butter, milk and mint until spreading consistency. Tint 1/2 with red and other 1/2 with green. spread on half the cookies. Top each with plain cookie. Chill

These are kinda putzy but have become a Christmas tradition at our house. I started making them for my Mom because she remembered having them at Christmas time.
