10 lb. red potatoes
3 doz. hard boiled eggs, chopped
1/2 c. chopped onion
1/2 c. chives, chopped
3 c. miracle whip
1 Pt. heavy whipping cream
2 tbsp. salt
3 tbsp. mustard
1/4 c. sugar
2 jars diced pimento peppers

Cook potatoes w/ skins on in gently boiling water until done. Remove skins and let cool. Once cool, cube potatoes. Place eggs, onions, chives & pimentos in bowl with cubed potatoes. In a separate bowl, mix the mayo, cream, salt, mustard & sugar together well. Add mayo mix to potatoes and mix together. Place in refrigerator and allow to sit for one day. Dressing will thicken up after 1 day.
