1 lb pork sausage (or cooked bacon/ham)
6 eggs
2 C milk
1 tsp salt
1 tsp ground mustard
6 slices white bread, cut into 1/2" cubes
1 C shredded cheddar cheese

Directions:
Directions:
In a skillet, brown and crumble sausage (or bacon); drain and set aside. In a large bowl, beat eggs, milk, salt, and mustard. Stir in bread cubes, cheese, and sausage. Pour into a greased 11x7x2 baking dish. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake uncovered, at 350º for 40 minutes or until a knife inserted near the center comes out clean.

I like to use the Spicy Jimmy Dean sausage. At times, I add a small can of the Ortega chilies. It has been our experience that it takes a little longer than stated, closer to 50 minutes.

We put it together on Christmas Eve morning, and on Christmas morning we pop it in the oven while we coffee. Then when the presents are opened and the kids and grandparents have enjoyed themselves, we eat! Great with champaign.
