1 -lb. pasta any kind ( I like curly or twists)
1 stick butter or margarine
1/4 cup olive oil
1 cup choppped seasoning (onions, garlic, green peppers, celery)
1 can chopped tomatoes
1 can chopped/sliced black olives
1 can or jar artichoke hearts
Any kind of Italian cheeses to garnish

Directions:

Cook one pound of pasta and set aside. Melt butter/margarine in pot; add olive oil; saute chopped seasonings until tender; add tomatoes, artichokes, and black olives. Simmer for about ten minutes and add pasta. Garnish with your favorite cheeses.

This is the perfect dish for Lent. There is no meat and it is quick and easy after a long day at work. It's Kristi's and Mary's favorite. (Of course now, I have to make two batches and leave out all dairy for Kristi - but it still comes out good with just the olive oil.)
