3 large egg whites
¾ cup sugar
crushed candy canes

heat oven to 200 degrees. Line 2 large baking sheets with wax paper or parchment. In large bowl, combine egg whites and sugar. Place bowl over a pot of gently simmering water, and whisk constantly until sugar dissolves and egg mixture feels warm to the touch, about five minutes. Remove bowl from water bath. Wath mixer on high, beat until very stiff peaks form, about six minutes. Spoon mixture into a large freezer-weight zip-top bag fitted with a star tip, and pipe kisses onto baking sheets. Sprinkle with crushed candy canes. Bake until crisp throughout, about 1 hour. To cool, leave in oven with door closed, about 1 hour. Makes four dozen.
