2 Tbs fresh lime juice
1 Tbs olive oil
1 tsp salt

Directions:
Grill first 3 ingredients on a lightly greased grill rack over medium-high heat 10 minutes or until tender, turning occasionally. Remove bell pepper and onion from grill and set aside. Grill corn 10 minutes more or until tender. Cool slightly. Cut corn from cob and place in a bowl. Place bell pepper in a resealable plastic bag; seal and let stand 10 minutes to loosen skin. Remove charred skin. Chop bell pepper and onion, and add to corn. In a small bowl combine cilantro and last 4 ingredients; toss with vegetables to coat. Serve as a side dish; atop grilled fish, pork, or chicken; or as a chunky salsa with tortilla chips.
