1 lb. fresh spinach leaves
2 hard cooked eggs
1/4 tsp. Tabasco sauce
1 tsp. vinegar
1/4 tsp. salt
1 c. mayonnaise*
3 tbs. horseradish
1/2 c. finely chopped celery
1/2 c. finely chopped onion
1 c. diced sharp cheddar cheese, 1/4" cubes

* Note to the Gillilands - mayonnaise - not Miracle Whip.

Wash spinach, drain & dry, then finely chop. Chop whites of eggs, crumble egg yolks & set aside.

Combine everything in a large bowl, mix thoroughly and let stand in the refrigerator for 1/2 hour. Serve on a lettuce leaf, sprinkle crumbled egg yolks on top.
