6 medium squash (2 1/2")
2 tbsp. butter
1 egg, beaten
1 small onion, finely chopped
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. sugar
1 cup cornbread crumbs
1/2 cup shredded cheddar cheese

Directions:
Directions:
Wash squash and cut into 1" slices. In saucepan cover with water and cook until tender. Drain well, mash slightly. Add butter, egg, onion, salt, pepper, sugar and bread crumbs. Mix by hand thoroughly. Put in greased casserole. Sprinkle with cheese. Bake at 350º for 20-25 minutes. Note: I like to sometimes substitute stove top stuffing in place of the cornbread crumbs.
