1 Tbsp. oil
4 pork chops, 1-inch thick
4 slices onion, 1/2-inch thick
4 green pepper rings 1/4-inch thick
4 Tbsps. rice
3 cups chopped stewed tomatoes
1 cup diced celery
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
Grease heavy covered skillet with oil; brown chops well on both sides. On each chop place 1 slice onion and 1 slice pepper; spoon 1 Tbsp. rice into rings. Combine remaining ingredients; pour over chops. Cover; cook on high heat until steaming. about 8 minutes; reduce heat and simmer about 1 hour, or until meat is tender.
