6 lbs. lean, meaty beef short ribs, cut in serving pieces.
1/2 cup flour
Cajun seasoning to taste
1 cup beef broth (I use Swansons)
1 Tsp. garlic powder
1 tsp. ground cloves
1 bay leaf, crumbled
1 large onion, thinley sliced, and separated into rings

Preheat oven to 450º

Place ribs in a large Dutch oven; sprinkle with flour and cajun seasoning. Roast, uncovered, at 450º for 25 minutes. Remove meat from pan; pour off fat; reduce oven heat to 325º. Return meat to pan with beef broth and crumbled bay leaf; sprinkle with cajun seasoning; smother with onion rings spread over top of meat. Cover; bake 1-1/2 to 2 hours, or until meat is tender.
