1 stick butter
1 onion, chopped
1 bell pepper, chopped
1 stick celery, chopped
1 T. flour
1 lb. crawfish tails
1 1/3 T. parsley
1 1/2 c. half & half
1/3 lb. Velveeta, cubed
1 clove garlic, minced
1 T. chopped jalepeno peppers
1/3 lb. fettucine noodles
Parmesan cheese

Directions:

Melt butter in large, heavy saucepan. Add onion, bell pepper, celery and garlic and saute. Add flour and blend well. Cook for 5 minutes, stirring constantly.

Add crawfish tails, parsley, and about 1/3 cup of water. Cover and simmer for 15 minutes, stirring often. Add half & half, cheese and jalepenos. Mix well. Season with Tony's. Cook covered over low heat for 20 minutes.

Boil noodles according to package directions, drain and add to the sauce. Mix thoroughly and pour into a buttered casserole dish. Sprinkle with parmesan cheese and bake at 350ºF for 10 minutes, or until bubbly.

This recipe freezes well - just cover and freeze before baking. When ready to use, defrost slightly, then bake at 350ºF until heated throughout and bubbly.
