6 quart sauce pan with lid
2 ozs. salt pork (thinly sliced)
8 cups water
1 bunch green onion (diced)
1 small onion (diced)
1 6 oz. potato (diced)
1 green pepper (diced)
1- 2oz. can tomato paste
1- 6oz. can tomato sauce
1- 6oz. can stewed tomatoes
1 Tablespoon. olive oil
1 Tablespoon. vegetable oil
4 cups whole kernel corn
2 cups cut okra
2 hot or mild hot links and or 2 sausage links(diced)
Season to taste with spices: black pepper,fresh garlic or powdered, Cajun seasoning, and basil

Optional: you may add shrimp if desired.

In a covered saucepan, fry salt pork in olive oil and vegetable oil until light brown on both sides. Add water, tomato paste, tomato sauce, stewed tomatoes, diced onions, green onions, green pepper, and diced potatoes, cut okra, corn, hot link, sausage link and spices. Bring to a boil, (stirring occasionally). Cover and simmer for 30 minutes (stirring occasionally). If adding shrimp, place in simmering pan after removing from heat and let stand for 5 minutes.

Serve over rice with cornbread or crackers etc.
