1 c. butter softened
2/3 c. sugar
1 T. pure vanilla extract
1 egg lightly beaten
2½ c. all-purpose flour
Directions:
Directions:
Beat butter and sugar until light and fluffy. Blend in vanilla. Add egg; beating one minute. Gradually add flour. Cover and refrigerate until well chilled.

Roll to ¼ inch thickness on floured surface. Place on ungreased cookie sheet. Preheat oven to 325ºF. Bake 12 to 15 minutes.

Frosting:
2 c. confectioners’ sugar
1 tsp. vanilla extract
2 ½ T. evaporated milk
Food coloring

Takes a long time for frosting to harden. Usually overnight.
