1/2 diced red onion
1 diced green pepper
1/2 diced red pepper
1 c. chopped celery
1 can LeSeur peas, drained
1 can shoepeg corn, drained
1 can french style green beans, drained
marinade:
1/2 c. vegetable oil
3/4 c. vinegar
1 c. sugar
1 tsp. salt
1 tsp. pepper
1 T. water

Directions:
Directions:
Put first 4 ingredients in a bowl. In saucepan, mix together marinade ingredients. Bring to a boil. Pour over vegetables in bowl. Let set for 20 minutes to soften vegetables. Add canned vegetables. Cover and place in refrigerator. Marrinate overnight. Discard about 1/2 of the marinade when serving.
