5 lb. boned leg of lamb
salt and pepper to taste
1 1/2 c. sliced onion
2 T. butter
1 can chopped tomatoes
1 c. water
3 cloves of garlic, minced
2 c. chicken broth

Directions:
Directions:
Preheat oven at 400º
Place all ingredients in a roasting pan. Salt and pepper leg of lamb and place in center of baking pan. Cook at 400º for 20 minutes. Reduce heat to 350 º and cook for another 1 hour to 1 1/2 hour or until done. 160 º is considered medium. Serve over Orzo.
