2 cans artichokes (not marinated), well drained and quartered
1/2 c mayonnaise
1/2 c Parmesan cheese

Directions:

Mix the mayonnaise and Parmesan cheese and carefully stir in the drained, quartered artichokes. Place in a small baking dish that has been sprayed with Pam. Bake in a 350º oven for approximately 20 minutes or until lightly browned. Serve with Triscuits or Pannini bread chips. Great hot or at room temperature.

When I make this for a crowd, I use a large commercial sized can of artichokes. I drain the whole can, quarter each crown and mix with 2 c of Mayonnaise and 2 c of Parmesan cheese. Place in a 11X13" Pyrex baking dish that has been sprayed with Pan. Bake about 30-45 minutes or until light brown.
