Pineapple Upside Down Ham Loaf Recipe

1 1/2 lbs ground ham
1/2 lb ground pork
2 eggs
1 cup milk
1 cup cracker crumbs, finely crushed
1/2 tsp salt
1/8 tsp pepper
1/4 cup brown sugar, firmly packed
1 tsp dry mustard
2 Tbsp cider vinegar
3 slices canned pineapple

Combine the first 7 ingredients.

Combine brown sugar, mustard, and vinegar. Pour into a loaf pan 10x5x3.
Arrange pineapple slices on top of sugar mixture.
Pack meat on top of pineapple.
Bake at 325 degrees (cover with aluminum foil until last 1/2 hour and uncover) for 2 hours or until done.
