1 Small peeled and boiled tender potato
1 Box powdered sugar
3-5 Tablespoons melted butter
1/4 Cup evaporated cream
3/4 Cup smooth peanut butter

Directions:
Mash cooled potato; Mix powdered sugar with potato and a couple tablespoons of butter.

While mixing with electric mixer add cream a little at a time then a little more butter. Mix until set but not too firm. Transfer to surface dusted with small amount flour and powdered sugar. Roll to about 1/8" rectangle. Spread with peanut butter to cover rectangle. Start a wide side and roll like a jelly roll.

Place in fridge for about 20 minutes. Cut in 1/4 to 1/2" slices.

I made this candy every Christmas. It is best after it sets in fridge a little bit. It looks very good in decorated boxes or tins.
