4 chicken breasts, skinned and boned
5 cups water or broth
1 large onion, chopped and divided
2 tbsp. butter or margarine
2 celery ribs, chopped about 1/3 cup
3 cans(16oz.) great northern beans, rinse and drain
3 cans(4.5oz) green chiles, chopped
1 cup chicken broth, canned
1 tsp. ground cumin
1 bay leaf
1 tsp. salt
1/8 tsp. ground red peper
1 tbsp. fresh cilantro

Directions:
Directions:
Place chicken, 5 cups water and half onion in a large sauce over medium high heat, cook until chicken is tender. Remove chicken, reserving broth in dutch oven. Cut chicken into pieces; set aside. Melt butter in a skillet; add celery and remaining onion, saute until tender.
Stir chicken, celery mixture, 2 cans beans and next 6 ingredients into the broth in the dutch oven and bring to a boil. Reduce heat cook for one hour, stirring until thickened. Process remaining 1 can of beans in a blender until smooth, scrape down the sides. Stir puree into the chili. Remove and discard the bay leaf, stir in the cilantro just before serving, add desired toppings. Serves 4-6.
