1/4 CUP SALT
1 CUP WATER
1/2 TABLESPOON POWDERED ALUM
3 CUPS VINEGAR (5 % ACIDITY)
4 CUPS SUGAR
1 TABLESPOON MIXED PICKLE SPICES
1/2 TEASPOON CINNAMON
1 TABLESPOON CELERY SEED
1 TALBESPOON MUSTARD SEED
1/2 TEASPOON ALL SPICE

SLICE TOMATOES. SPRINKLE WITH SALT AND LET STAND OVERNIGHT. DRAIN AND POUR 2 QUARTS BOILING WATER AND Q TABLESPOON POWDEREFD ALUM OVER TOMATOES. LET STAND 20 MIN. DRAIN AND COVER WITH COLD WATER AND DRAIN.

COMBINE VINEGAR, WATER, SUGAR, AND SPICES (SPICES IN A BAG). BRING TO A BOIL, POUR OVER TOMATOES, LET STAND OVERNIGHT

THIRD MORNING BRING ALL TO BOIL AND PACK IN JARS AND SEAL.
