2 CUPS SUGAR
1 CUP OIL
1 - 2 TEASPOON VANILLA (I USE 2)
1 TEASPOON SALT
1/4 TEASOON BAKING POWDER
2 CUPS GRATED ZUXXHINI
3 CUPS FLOUR
1 CUP NUTS

BEAT EGGS UNTIL FOAMY AND ADD REMAINING INGREADIENTS AND MIX WELL. FOUR BATTER INTO A GREASED LOAF PAN. (THIS MAKES ONE LARGE LOAF OR TWO MED. LOAVES.)

BAKE AT 350º - 1 HOUR AND 2O MIN.

COOL IN PAN 10 MIN. tHEN REMOVE LOAF FROM PAN AND COOL ON RACK.
