1/3 CUP HOT WATER

3 EGG WHITES
1 1/2 TEASOON VANILLA
1/2 CUP CHOPPED NUTS

COMBINE FIRST 4 INGREADIENTS IN SAUCEPAN. COOK SLOWLY STIRRING CONSTANTLY UNTIL SUGAR DESSOLVES AND SYRUP REACHES THE BOILING POINT. BOIL OVER HIGH HEAT WIHOUT STIRRING UNTIL SYRUP REACHES THE HARD BOIL STAGE (250º). SYRUP FORMS A BALL HARD ENOUGH TO HOLD ITS SHAPE WHEN DROPPED INTO VERY COLD WATER.

BEAT EGG WHITES IN ELECTRIC MIXER UNTIL THEY FORM STIFF PEAKS. POUR HOT SYRUP SLOWLY IN A FINE STREAM OVER EGG WHITES, BEATING CONSTANTLY AT HIGH SPEED. ADD VANILLA AND CONTINUE BEATING UNTIL MIXTURE FORMS SOFT PEAKS AND BEGINS TO LOSE ITS GLOSS. IF NUTS ARE USED, FOLD THEM IN QUICKLY AND DROP TEASPOONFULS OF MIXTURE ONTO A WAXED PAPER COVERED COOKIE SHEET, PUSHING CANDY OFF SPOON WITH SMALL SPATULA AND MAKING A SWIRL OR PEAK ON TOP OF EACH PIECE OF CANDY.
