Lomo Saltado Recipe

2 lbs beef loin
1/8 c. red wine vinegar
1 lb onion
1 lb tomato, seeded and chopped
1 1/2 lb potato
4 galic cloves
1 tsp ground cumin
salt & pepper to taste

Cut beef into strips
Combine with cumin, vinegar, garlic, salt and pepper.
Marinate for 1/2 hour
Cut potatoes into thick steak fries. Fry until brown
Saute meat and marinade over medium heat until browned
Add in the tomato and stir.
Serve with steak fries on the side. White rice is also a traditional side for this.
