1 c. soft butter
1/3 c. whipping cream
2 c. unbleached white flour
Granulated sugar

Icing (filling) Ingredients:
1/4 c. soft butter
3/4 c. confectioner's sugar
1 tsp. vanilla
Food coloring (optional)

Directions:
Mix together cookie dough ingredients and chill. Roll dough a little thinner than a pie crust and cut out rounds (use flour to keep dough from being
too sticky). Pat rounds into a bowl containing granulated sugar. Place unto ungreased cookie sheet. Place fork into cookie round 3 times to make holes.

Bake at 375 degrees for 7 - 9 minutes. Bottom of cookie should be light when done. Allow to cool. Stir together filling ingredients. Add food coloring if wanted. Spread filling onto cookie halves and press together to create cream wafers.

Rolling the dough can be challenging. But these cookies are well worth the trouble. They are a holiday favorite everywhere we bring them. You can color the filling to match your occasion. Do not attempt to taste test the cookie by sampling
the cookie dough. The cookies will not be delicious
until the filling is added.
