1 cup chopped pimento-stuffed olives
cup chopped ripe pitted olives
1 large red or green pepper, chopped
1/3 cup chopped parsley 2 Tbsp. Drained capers
2 tsp. Minced garlic
tsp. Oregano
cup olive oil
1 tsp. Red wine vinegar

Combine ingredients; cover and set aside at room temperature at least hour or up to 4 hours (or refrigerate overnight).
