Ingredients: 1 part red-wine vinegar, 1 part white-wine vinegar, 2 parts balsamic vinegar, 5 parts olive oil, tsp lemon juice, tsp kosher salt, tsp fresh ground black pepper, 1 package of fresh thyme, 1 package of fresh oregano, 1 package fresh rosemary, trimmed NY steaks,

Directions:Mince the herbs a finely as possible with a mezza luna, ulu, or food processor. Mix herbs with vinegars, oil, lemon juice, salt and pepper in a large bowl with a wire whisk. I generally use 1/4 cup as my parts for the vinegar and oil, and that's enough for 5-6 steaks. Marinate for at least an hour, up to 24 hours. If you marinate for over 3 hours do not add the lemon juice until 3 hours before cooking. Take steaks out of the fridge approximately 45 minutes before cooking to allow them to come to room temp. Grill on high heat according to thickness, between 4-8 minutes a side. Allow steaks to set for 5 minutes before serving. Enjoy! |

Notes: Try to get organic steaks and herbs of you can!
The prep time is so long because plucking the thyme leaves is a pain in the butt! See if you can recruit helping hands for that task and the prep time speeds up considerably. Or you can use dried herbs, but it's not quite as good.
