3/4 c. butter.
3/4 c. sifted powdered sugar
2 T. evaporated milk
1 tsp. vanilla
1/4 tsp. salt
2 c. sifted all purpose flour

Caramel Filling:
1/2 lb. (28) light colored candy caramels
1/4 c. evaporated milk
1/4 c. butter
1 c. powdered sugar
1 c. chopped pecans

Chocolate icing:
3/4 c. Semi-sweet chocolate chips
1/4 c. evaporated milk
1 T. butter
1 tsp. vanilla
1/3 c. powdered sugar

Cream butter and sugar well. Add the evaporated milk, vanilla and salt. Mix well. Blend in the flour. Chill until firm - a couple of hours. Form into rolls in wax paper. Refrigerate or freeze until ready to bake. At least overnight. Cut into 1/8 inch slices and bake for 12 to 15 minutes. Should only slightly brown on sides. Cool.

For caramel filling, combine caramels and evaporated milk in top of double boiler. Heat until caramels melt. Add butter, powdered sugar and nuts.

For chocolate topping, melt chocolate chips and evaporated milk over low heat. Stir in butter, vanilla and powdered sugar.

Place small spoonful of caramel filling on cookie, top of small dab of chocolate topping. Top with one pecan halve.

These started with my Mom and now I make them for my children. These are a yummy favorite X-mas treat at our house. I usually double the caramel filling so I can load them up. Enjoy!
