Boiling the garlic makes it mellow.

2 garlic cloves
1 tsp.dijon mustard
1 tbsp. white wine vinegar
1/2 cup olive oil
freshly ground pepper
1/4 cup grated parmesan cheese
1/4 cup pine nuts
1-1/2 large head of romaine

Directions:
Directions:
Boil garlic for 10 minutes.
Drain and mash garlic to paste.
Whisk in mustard and vinegar, salt and pepper.
Add oil in a stream, until blended.
Toss with lettuce, cheese and nuts.
