2 tbsp. flour
1 1/2 tsp. salt
1 tsp. dry mustard or caraway seed
1/2 tsp. sugar
1/4 tsp. black pepper
1/4 tsp. ground sage
1 pork loin roast

Topping

1 1/2 cups applesauce
1/2 cup brown sugar
1/4 tsp. cinnamon
1/4 tsp. mace
1/4 tsp. salt

Directions:
Directions:
1. Mix flour, salt mustard or caraway seed, sugar, and sage. Rub over surface of meat. Set meat fat side up in a roasting pan.

2. Roast at 325 F. for 1 1/2 hours.

3. For topping, mix applesauce with brown sugar, cinnamon, mace and salt. Spread on top of meat.

4. Roast about 45 minutes longer, or until done.
