1 lb package rotini
1 lb hot or sweet italian sausage
1 large onion chopped (about 1 cup)
1 large red bell pepper chopped (about 1 cup)
1 large orange or yellow pepper chopped (about 1 cup)
Cooking oil spray
1 T olive oil
1 jar Alfredo sauce (10 oz, 1 cup)
1/2 cu skim or low fat milk
2 tsp dried basil
1 T minced garlic
1/4 cup grated Parmeasan Cheese

Directions:
Place pasta in 4 qts boiling water and cook according to directions on package. Meanwhile, brown the sausage over medium heat in 12 in skillet. Stir occassionally breaking into bite size pieces. Chop and see onions and peppers and reserve them in separate containers.
Drain sausage well. Spray 13 x 9 baking dish with cooking oil spray. Pour the sausage into the dish. Drain the rotini, and pour the rotini into the dish with the sausage and toss. (The baking dish and vegetable conatiners may be refrigerated at this point, covered, up to 24 hours.)
Heat the oil on medium-high in a 12 in skillet. Add the onions and cook 2 minutes. Add the peppers to the skillet and continue to cook until the vegetables begin to carmelize, approx 6 min. While the vegetables cook, whisk together Alfredo sauce, milk and basil in small bowl. Add the garlic to the skillet with the vegetables and cook 1 more minute.
Combine the pasta and sausage mixture to the Aflredo sauce mixture. Stir until the pasta is coated. Season lightly with salt and pepper. Spread mixture evenly in dish and sprinkle with Parmesan cheese. Preheat oven to 350º. Bake uncovered for 20 minutes or until heated through and just beginning to brown on top.
